The weather does not improve to match. That is the thing worth understanding before booking. Over the holidays you are paying more than August rates for skies that will probably not deliver a sunset. What you are buying is the atmosphere, which is genuinely considerable here over New Year, and the guarantee that everything is open and running.

Seminyak base, and over the holiday fortnight do not plan to leave it. The coast road at that time of year is the worst it gets.
Day 1: Arrive, check in, walk to the beach and see what the sky is doing.
Day 2: Full day at a beach club. Covered daybeds mean the rain is somebody else's problem.
Day 3: Canggu whenever the morning looks clear, and early in the month while the road is still quick.
Day 4: Spa in the afternoon, then the best dinner of the trip.
Day 5: Cooking class, or Tanah Lot if the forecast gives you an opening.
Day 6: A second beach club, or a deliberately empty day at the hotel.
Day 7: Slow morning, late checkout, airport with generous margin.
If your dates fall after roughly 20 December, book the restaurants, the activities and the airport transfer before you fly. The holiday fortnight sells out and prices roughly triple.
