A sultry evening restaurant dedicated to wining and dining

RÜSTERS has grown into a compound on the outskirts of Ubud built around artisanship, and Santé is its evening venue, given over to wine and dinner.

Two people run it: Sommelier I Made Suarna, whose wine list holds 60 varieties from 15 regions alongside cocktails such as the Tamarind Old Fashioned, and Chef Nicolai Stage. Stage, who is Danish, cooks European classics without ornament and takes some dishes in an Asian direction, including the Crispy Duck and the Wagyu Wontons.

Base yourself near Santè by RÜSTERS in Ubud

Santè by RÜSTERS sits in Ubud, so start with hotel prices and pick a base from the walkable centre to the quiet valleys at Sayan. Then look at activity packages, since the temple circuits, a rice-terrace walk and a cooking or yoga class are easy to add to the trip. Finally, price a car: the sights are spread across the valley, so one driver for the day beats separate tours. The three links below go straight to each.

Sleep Better in Bali

From stylish resorts to quiet retreats, discover Bali stays that fit your plans and make every night feel special.

RÜSTERS built itself into a destination on Ubud's outskirts before adding Santé, so this is the evening half of a compound rather than a restaurant standing on its own.

It is an open-air terrace facing jungle, lit warm, and built around wine as much as food, which makes it a slow booking rather than a quick dinner. Ubud has plenty of places to eat and far fewer designed for a long evening of drinking well. We would come after dark and treat the wine list as the menu.

Must try:

Tamarind Old Fashioned, Crispy Duck, Wagyu Wontons

Best for:

Wining and dining, sultry evening dates, exploring curated wines

Open from 6 pm to 10 pm, Monday to Saturday.
